Özet
This comprehensive chapter provides the current literature on the encapsulation of polyphenols in electrospun fibers, specifically highlighting the potential of electrospinning for enhancing the solubility, stability, and bioavailability of these vital compounds. Polyphenols, including phenolic acids and anthocyanins, have been extensively studied because of their anti-inflammatory, antioxidant, anticarcinogenic, and cardioprotective properties. Despite their significant health benefits, their uses in the food, pharmaceutical, as well as in cosmetic industries have been hindered by several problems, such as poor stability, low solubility, and reduced bioavailability. Encapsulation methodologies utilizing electrospun fibers have been demonstrated to effectively address these limitations, improving both stability and bioavailability of phenolic ingredients. The structure of electrospun fibers, produced using electrospinning, is particularly effective in this regard. This chapter discusses several studies in which an enhanced encapsulation efficiency of polyphenols was achieved using the electrospinning technique. Different encapsulation approaches, such as the use of protein-polysaccharide blends, inclusion complexes, and biopolymer fibers, have been investigated, revealing their unique benefits and potential applications. Notably, the ability of electrospinning to ensure the controlled release and enhance the antioxidant activity of encapsulated polyphenols is highlighted, providing insights into its promising application in the food industry and beyond. Findings from studies on the encapsulation of phenolic compounds are discussed in detail. For instance, strategies for enhancing the stability, solubility, and bioavailability of phenolic compounds through encapsulation in different types of electrospun fibers are explored. The chapter offers future perspectives on the application of electrospinning technology for polyphenol encapsulation, emphasizing the need for continued research and development in this area. The potential of coaxial electrospinning as a superior technique for the controlled release and enhanced stability of polyphenols is also underlined, paving the way for its wider application in different industries.
